Quick 30 Minute French Bread & Baguettes

Make soft, crispy French bread in just 30 minutes! These fast baguette-style loaves use simple ingredients and a quick method that delivers real bakery flavor without long rise times. Perfect for beginners, busy cooks, or anyone who wants fresh homemade bread fast!

Quick 30 Minute French Bread & Baguettes

1 3/4 cups lukewarm water (414 g)

1 Tbsp sugar (12 g)

2 tsp instant yeast (6 g)

4 1/4 cups bread flour (510 g) (Here is my recipe for fresh milled baguettes)

2 tsp salt (12 g)

Instructions

Mix all ingredients in a stand mixer for 2 minutes. Check the dough—it should be soft and slightly tacky. Knead for 7 minutes.

Turn the dough out immediately, divide into 2 pieces using a bench knife, and shape into baguettes. Place on a cookie sheet, baguette pan, or French bread pan. Score the tops with a lame for expansion. 

Bake at 425°F for 15 minutes, until golden and crisp. Enjoy!
