Fresh Milled Flour White Mountain Bread (Publix Bakery Copycat)
Ingredients
- 1½ cups (355 g) warm water
- 1 Tbsp (20 g) honey or pure maple syrup
- 2 Tbsp (27 g) oil
- 4¼ cups (510 g) fresh milled flour (I use all hard white wheat, or 255 g Khorasan and 255 g hard white)
- 2 tsp (12 g) salt
- 1 Tbsp (9 g) instant yeast
- 1 Tbsp (8 g) vital wheat gluten, optional but recommended
- 1 Tbsp (8 g) sunflower lecithin, optional but recommended
Instructions
1. Mill your grains. For this recipe, I like to use all hard white wheat or ½ hard white and ½ Khorasan or spelt.
2. Add the ingredients to the bowl of a stand mixer in the order listed.
3. Knead with the dough hook for 12-14 minutes, until the dough is smooth and tacky (this will depend on your mixer).
If the dough sticks heavily to the bowl, add a little more flour, 1 tablespoon at a time, until it pulls away from the sides. The dough should still feel slightly tacky. Adding too much flour can result in a dense loaf.
4. Cover and let rise for 1½–2 hours, or until expanded and puffy.
5. Turn the dough onto a lightly floured surface. Gather the edges toward the center several times, then shape into a round boule.
6. Place the dough on a parchment-lined baking sheet.
7. Cover and let rise for 30–60 minutes.
8. Preheat your oven to 375°F (190°C).
9. Dust the top of the loaf generously with flour and score as desired.
10. Bake for 30–35 minutes, or until golden brown and the loaf sounds hollow when tapped on the bottom.
11. Cool completely before slicing for the cleanest slicing.
12. Store in a beeswax bread bag!
*If you're looking for an alternative to plastic bread bags, our handmade beeswax bread bags are a healthy way to store your bread! They are reusable, saturated (not sprayed!) with organic beeswax, are naturally antibacterial to help keep your bread from molding, and handmade right here by me and my daughters on our family farm! We'd be delighted to send you one for your homemade bread!
