The BEST Gluten Free Banana Bread
1 ¾ cup (245 g) gluten-free all-purpose flour
1 tsp (5 g) baking soda
½ tsp (3 g) salt
1 cup (200 g) granulated sugar
¼ cup (57 g) melted butter
2 large eggs
1 ½ cups (340 g) mashed, over-ripe bananas (about 3-4 bananas)
1 tsp (5 g) vanilla extract
1/3 cup (80 g) water
*I use King Arthur Measure for Measure Gluten Free Flour
Directions
1. Preheat the oven to 350°F (180°C). Grease or line a loaf pan with a loaf pan liner.
2. Add the gluten-free flour, baking soda, and salt to a large mixing bowl or the bowl of a stand mixer. Whisk to combine.
3. Add the sugar, melted butter, eggs, mashed bananas, vanilla extract, and water. Mix just until the ingredients are fully combined. Do not overmix.
4. Pour the batter into the prepared loaf pan and smooth the top.
5. Bake for 55–65 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top begins to brown too quickly, loosely tent the loaf with foil.
6. Let the banana bread cool in the pan for 5–10 minutes, then carefully turn it out onto a wire rack. Allow it to cool completely before slicing for the best texture and crumb.
