Bread Machine Sourdough Discard Sandwich Bread (Dough Cycle)

 

This soft sourdough discard sandwich bread is made using the bread machine for easy mixing and kneading, with the option to bake it right in the machine or finish it in the oven. It’s a great way to use unfed sourdough discard while still getting a reliable rise thanks to yeast. Perfect for sandwiches, toast, and everyday bread, this recipe works for 1 lb, 1½ lb, and 2 lb loaves and is beginner-friendly. Whether you use the dough cycle or the full bread machine bake, this loaf turns out soft, fluffy, and delicious every time.

Bread Machine Sourdough Discard Sandwich Bread (Dough Cycle)

This recipe uses unfed sourdough discard plus yeast for a reliable rise.

2 LB LOAF (Bread Machine) This is the size I made in the video

Add ingredients to the bread machine pan in this order:

·       1 cup + 2 tablespoons (250 g) warm water (100–110°F)

·       1/2 cup (100 g) sourdough discard (unfed starter or active)

·       1 tablespoon (20 g) honey or sugar

·       4 tablespoons (50 g) butter, melted

·       4 cups (500 g) all-purpose flour or bread flour (or 620 g fresh milled hard wheat + egg or 1 Tbs sunflower lecithin + autolyze)

·       2 teaspoons (10 g) salt

·       2 1/4 teaspoons (7 g) instant yeast


Bread Machine Settings

·       Dough Cycle  for baking in a loaf pan

·       OR

·       Basic / White Bread Cycle  for baking fully in the machine

o   Light or Medium crust


After Dough Cycle (Loaf Pan Method)

1.    Remove dough when cycle ends.

2.    Shape into a loaf.

3.    Place in a greased 10×5-inch or 9x5 loaf pan or divide into 2 smaller loaves.

4.    Cover and let rise until dough has risen above the edge, about 30-45 minutes.

5.    Score top of loaf with lame, optionally.

6.    Bake at 350°F (175°C) for 35 minutes.

7.    Cool before slicing for best crumb and texture.


1½ LB LOAF – Bread Machine

·       3/4 cup + 1 tablespoon (190 g) warm water

·       1/3 cup (75 g) sourdough discard

·       2 teaspoons (15 g) honey or sugar

·       3 tablespoons (38 g) melted butter

·       3 cups (375 g) flour (or 465 g fresh milled hard wheat + 1 egg 1 Tbs sunflower lecithin + autolyze)

·       1 1/2 teaspoons (7.5 g) salt

·       1 3/4 teaspoons (5.5 g) instant yeast

Settings

·       Dough Cycle or Basic / White Bread Cycle

If baking in oven: use an 8.5x4.5 or 9×5-inch pan, bake 30 minutes at 350°F.


1 LB LOAF – Bread Machine

·       1/2 cup + 1 tablespoon (130 g) warm water

·       1/4 cup (50 g) sourdough discard

·       1 1/2 teaspoons (10 g) honey or sugar

·       2 tablespoons (25 g) melted butter

·       2 cups (250 g) flour (or 310 g fresh milled hard wheat + 1 egg or 1 Tbs sunflower lecithin + autolyze)

·       1 teaspoon (5 g) salt

·       1 1/4 teaspoons (4 g) instant yeast

Settings

·       Dough Cycle or Basic / White Bread Cycle

If baking in oven: use a small loaf pan, bake 25–30 minutes at 350°F.


Bread Machine Tip (Important)

Check the dough 5–10 minutes into kneading:

·       Dough should form a smooth, soft ball

·       If sticky add 1 tablespoon flour at a time

·       If dry add 1 teaspoon water at a time

We absolutely love your recipe for your bread machine sourdough bread. So easy, you don’t spend all day or 2-3 days making a loaf. Sometimes we just eat more than normal and all the sudden there is 1 slice, or none, left so it’s hurry up and get her done. Thank you so much for taking the time to help us novices, only special people take the time to do this and you are appreciated so much for your help.♥️ I do have a question. My husband bought me a Bosch mixer so I was wondering how long would I mix this recipe in my Bosch instead of using my 40 year old Bread Machine. It’s old but works good, but I would feel bad using it since the husband paid near $500.00 for the Bosch just to make baking easier. I am 72 and have bad arthritis in my hands and shoulders with one replaced and need the 2nd one done now. So you understand I feel I need to use the mixer if possible, I just don’t know how long for it to knead the bread without overdoing it. Thank you Robyn for any advice you can give. ❤️
