Fresh Milled Pumpkin Spice Waffles (Whole Wheat or All-Purpose)
These Fresh Milled Pumpkin Spice Waffles are the perfect easy and festive fall breakfast! Made with freshly milled whole wheat flour (spelt and soft white wheat) these whole wheat waffles are light, fluffy, and full of warm pumpkin spice flavor. They come together quickly and are perfect for a cozy fall morning. Serve them warm with maple syrup, pecans, whipped cream, or your favorite waffle toppings.
Pumpkin Spice Waffles with Fresh Milled Flour
Makes 4-5 waffles
Wet Ingredients
¾ cup (180 g) pure pumpkin puree
¾ cup (180 g) milk or nut milk
1 large egg
1 tsp (4 g) pure vanilla extract
2 Tbs (40 g) pure maple syrup
1 Tbs (14 g) coconut oil (or any kind)
Dry Ingredients
1 cup (120) grams fresh milled flour or all-purpose flour I use 60 g spelt & 60 g
2 ¼ tsp (4 g) pumpkin pie spice or 1 tsp cinnamon, ½ tsp nutmeg, ½
tsp ginger, ¼ tsp ground cloves
½ tsp (3 g) salt
2 tsp (8 g) baking powder
Directions
Start by milling 120 grams of flour with your grain mill. For these Pumpkin Spice Waffles, I like 60 g of fresh milled spelt and 60 grams of fresh milled soft white wheat.
In a mixing bowl, combine the wet ingredients. In a separate bowl, whisk the dry ingredients together. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Let the batter rest for 10 minutes.
Heat your waffle iron and cook the waffles to your preferred size and crispness. Serve warm with maple syrup, toasted pecans, a dollop of whipped cream, or any of your favorite toppings. There’s nothing quite like a warm, homemade waffle fresh from the iron!
