Pumpkin Harvest Bread (Bread Machine)
1 lb Loaf
· ⅓ cup (80 g) milk, lukewarm
· 1 small egg (40 g), room temperature
· 2 teaspoons (9 g) oil or melted butter
· ⅓ cup (67 g) packed brown sugar
· ½ cup (113 g) pumpkin purée
· 2⅓ cups (280 g) bread or all-purpose flour (410 g fresh milled flour)
· ¾ teaspoon (4 g) salt
· ¾ teaspoon (2 g) ground cinnamon
· ¾ teaspoon (2 g) pumpkin pie spice*
· 1½ teaspoons (5 g) instant yeast
· ⅓ cup (40 g) dried fruit (raisins, cranberries, or cherries)
· 3 tablespoons (20 g) chopped nuts (pecans or walnuts)

· ½ cup (120 g) milk, lukewarm
· 1 large egg (50 g), room temperature
· 1 tablespoon (14 g) oil or melted butter
· ½ cup (100 g) packed brown sugar
· ¾ cup (170 g) pumpkin purée
· 3½ cups (420 g) bread or all-purpose flour (540 g fresh milled flour)
· 1 teaspoon (6 g) salt
· 1 teaspoon (3 g) ground cinnamon
· 1 teaspoon (3 g) pumpkin pie spice*
· 2¼ teaspoons (7 g) instant yeast
· ½ cup (60 g) dried fruit (raisins, cranberries, or cherries)
· ¼ cup (30 g) chopped nuts (pecans or walnuts)
2 lb Loaf
· ¾ cup (180 g) milk, lukewarm
· 1 large egg + 1 egg yolk (70 g total), room temperature
· 1½ tablespoons (21 g) oil or melted butter
· ¾ cup (150 g) packed brown sugar
· 1 cup (227 g) pumpkin purée
· 4⅔ cups (560 g) bread or all-purpose flour (715 g fresh milled flour)
· 1½ teaspoons (9 g) salt
· 1½ teaspoons (4 g) ground cinnamon
· 1½ teaspoons (4 g) pumpkin pie spice*
· 3 teaspoons (9 g) instant yeast
· ¾ cup (90 g) dried fruit (raisins, cranberries, or cherries)
· ½ cup (60 g) chopped nuts (pecans or walnuts)
Homemade Pumpkin Pie Spice Substitute (1 teaspoon): ⅔ teaspoon ground cinnamon + ¼ teaspoon ground ginger + ⅛ teaspoon ground nutmeg
Instructions
1. Add ingredients to the bread machine pan
In this order: milk, egg, oil, brown sugar, pumpkin purée, flour, salt, cinnamon, pumpkin pie spice, then yeast on top.
2. Select cycle
Choose the Basic/White Bread cycle, and the crust you’d like.
3. Check dough consistency
o Dough should form a smooth, soft ball, slightly tacky but not sticky.
o Too wet: add 1 tablespoon (8–10 g) flour at a time.
o Too dry: add 1 tablespoon (15 g) milk or water at a time.
4. Add-ins
When the machine beeps for add-ins, fold in the dried fruit and nuts (coated with ½-1 tsp cinnamon or flour). If your machine doesn’t have this signal, add them about 10-15 minutes after your machine starts mixing and kneading. This gives the gluten in your dough time to develop.
5. Finish & cool
Complete the bread machine cycle. Remove loaf, cover, and let cool a bit before slicing.
Stand Mixer Instructions
Add all ingredients (except fruit and nuts) to the bowl and mix on low speed until combined. Knead on medium-low (speed 2–3) for 6–8 minutes, until smooth and slightly tacky. Mix in fruit and nuts during the last minute. Place dough in a greased bowl, cover, and let rise about 1 hour, or until doubled. Shape into a loaf, place in a greased 8½×4½" pan, cover, and let rise 30–45 minutes, until domed. Bake at 350°F (177°C) for 30–35 minutes, until golden and the center reaches 190°F. Cool before slicing.

powdered sugar, 2 Tbs honey, 1 tsp ground cinnamon.
