Escape to the tropics with this pineapple coconut hawaiian bread made entirely in your bread machine! This soft, lightly sweet loaf tastes like Hawaiian bread and is often called pina colada bread thanks to its pineapple, coconut, and buttery richness. It’s perfect for breakfast, French toast, snacks, or anytime you want a tropical twist. It's a fun a different loaf to make in your bread machine! Make it entirely in your bread machine or using the dough cycle.
Pineapple Coconut Hawaiian (Pina Colada) Bread
Bread Machine Recipe
1 lb loaf
· 1/3 c milk (80 g)
· 2/3 c crushed pineapple, with juice (160 g)
· 1 1/2 Tbsp melted butter or oil (20 g)
· 2 1/2 Tbsp packed brown sugar (33 g)
· 2 c flour (240 g) (310 g fmf +1 egg + autolyze)
· 1/3 c coconut flakes (27 g)
· 1/8 tsp ground ginger (0.3 g)
· 3/4 tsp salt (4 g)
· 1 1/4 tsp yeast (4 g)
1.5 lb loaf (the size I made)
· 1/2 c milk (120 g)
· 1 c crushed pineapple, with juice (240 g)
· 2 Tbsp melted butter or oil (28 g)
· 1/4 c packed brown sugar (50 g)
· 3 c flour (360 g) (465 g fmf + 1 egg + autoyze)
· 1/2 c coconut flakes (40 g)
· 1/4 tsp ground ginger (0.5 g)
· 1 tsp salt (6 g)
· 2 tsp yeast (6 g)
2 lb loaf
· 2/3 c milk (160 g)
· 1 1/3 c crushed pineapple, with juice (320 g)
· 2 1/2 Tbsp melted butter or oil (37 g)
· 1/3 c packed brown sugar (67 g)
· 4 c flour (480 g) (620 g fmf + 1 egg + autolyze)
· 2/3 c coconut flakes (53 g)
· 1/2 tsp ground ginger (0.7 g)
· 1 1/3 tsp salt (8 g)
· 2 1/4 tsp yeast (8 g)
Directions
1. Add ingredients to the bread machine pan in the order listed.
2. Select Basic/White Bread, choose the correct loaf size, and your crust setting.
3. Check dough 5 minutes into kneading:
o Dough should form a soft, smooth, slightly tacky ball.
o If too wet → add 1 Tbsp flour at a time.
o If too dry → add 1–2 tsp water.
4. Remove from loaf pan as soon as possible. Brush with butter and cover with tea towel to cool.
5. Enjoy your delicious homemade loaf of bread!
To make this in a stand mixer: Mix and knead in a stand mixer for 6-8 minutes. Check you ball of dough to see if you need to add more flour. If it’s sticking to the sides and bottom of the bowl, it is too wet. Add 1/8 c more flour at a time until a nice ball of dough forms. Cover and let rise for about 45 minutes or until almost doubled in size. Punch down and shape into a loaf. Place in loaf pan. Let rise again for about 30 minutes. Bake in preheated 350-degree oven for 30 minutes.
