Perfect Chocolate Chip Cookies

These are my tried-and-true chocolate chip cookies—a family favorite I’ve been making for 20 years! They’re soft and chewy in the middle, lightly crisp around the edges, and loaded with chocolate chips. You can make them with all-purpose flour or fresh milled soft white wheat flour. This is the cookie recipe my family always comes back to!
Perfect Chocolate Chip Cookies
¾ c (150 g) granulated sugar
1 cup (200 g) packed brown sugar
1 cup (226 g) cold butter, cubed
2 large eggs
2 tsp (10 g) vanilla extract
2 ¾ c (330 g) all-purpose flour or fresh milled soft white wheat
1 tsp (3 g) cornstarch or arrowroot powder
¾ tsp (4 g) baking soda
¾ tsp salt (4 g)
2 cups (340 g) chocolate chips or chunks (10 oz bag of milk, dark, or semi-sweet)

Instructions:
Cream the sugars and cold butter for 4-5 minutes. Add the eggs and vanilla and continue creaming for 1 more minute. Add the dry ingredients, and mix until just combined. Fold in the chocolate chips. Optionally, you can chill your dough for a richer cookie and less spreading, or go ahead and bake. (I do recommend chilling for 1 to 24 hours when using fresh milled flour). Using a 2 tsp cookie scoop, arrange your dough onto cookie sheets. This size will give you 36 cookies.
Bake at 400°F for 8-11 minutes, depending on your oven, your baking sheet, and how you prefer your cookies! Generally, you want to take them out when the edges just begin to brown and they look underbaked, because they will continue to bake on the hot cookie sheet when removed from the oven. If you like softer cookies, bake about 8 minutes, if you like them crunchier for dipping, bake 11 minutes. Let cool 15 minutes before transferring to a rack or tray.
