One-Hour Potato Bread
Ingredients
1 cup water (240 g)
1/4 cup milk (60 g)
2 Tbsp sugar (25 g)
2 1/2 tsp instant yeast (8 g)
2 Tbsp melted butter (28 g)
3 cups bread flour or all-purpose flour (360 g)
1/2 cup instant potato flakes (40 g)
1 1/2 tsp salt (9 g)
Instructions
Add the ingredients into your stand mixer in the order listed.
Knead for 7 minutes. Be sure as it’s mixing and kneading that your dough isn’t too wet. If it’s sticking to the bottom of the mixing bowl, add a bit more flour.
Immediately press the dough out, shape into a loaf, and place into a well-oiled 8.5 × 4.5 loaf pan (or 9x5).
Let the dough rise in the pan for 20 minutes. Placing the pan on top of the oven while it preheats helps the dough rise faster. If your kitchen is cooler, the rise may take slightly longer. The dough should be peaking just over the edge of the pan when it’s ready for the oven.
Bake at 350°F (180°C) for 30 minutes or golden brown (190-200° F internally when baked through).
Remove the loaf from the pan immediately, brush the top with melted butter, and cover with a tea towel to cool. This helps create the softest crust.
For the best crumb and clean slices, allow the bread to cool before slicing.
