One-Hour Classic Cinnamon Raisin Bread

One-Hour Cinnamon Raisin Bread (One Loaf)
Ingredients (to make 1 loaf)
- ½ cup lukewarm water (120 g)
- ⅓ cup lukewarm milk (80 g)
- 3 Tbsp honey (63 g)
- 2 tsp instant yeast (6 g)
- 1 1/2 Tbs olive oil (21 g)
- 1 tsp vanilla extract (4 g)
- 2½–3 cups bread flour or all-purpose flour, as needed (300–360 g)
- 1 tsp salt (6 g)
- ¾–1 cup raisins (110–150 g)
- 1½ Tbsp cinnamon (12 g)
Instructions
1. In a mixing bowl, combine the water, milk, honey, yeast, and vanilla.
2. Add 2½ cups (300 g) flour and the salt. Mix and knead for 5 minutes, adding more flour only if needed. Dough should be soft, slightly tacky, but not sticky. If your mixer struggles or isn’t very efficient, knead 6–8 minutes instead.
3. Toss the raisins with the cinnamon, then add them to the dough. Mix until evenly distributed. If your mixer struggles, knead them in by hand.
4. Shape the dough into a loaf and place it into a greased 8.5×4.5-inch loaf pan.
5. Let rise in a warm place for 20 minutes (or a little longer if needed).
6. Bake at 350°F (175°C) for 30 minutes.
7. Remove from pan immediately, brush with melted butter, and cover with a tea towel to cool for a soft crust.
8. Cool before slicing.
One-Hour Cinnamon Raisin Bread (2 Loaves)
Ingredients (to make 2 loaves)
- 1 cup lukewarm water (240 g)
- ⅔ cup lukewarm milk (160 g)
- 6 Tbsp honey (126 g)
- 4 tsp instant yeast (12 g)
- 3 Tbs olive oil (42 g)
- 2 tsp vanilla extract (8 g)
- 5–6 cups bread flour or all-purpose flour, as needed (600–720 g)
- 2 tsp salt (12 g)
- 1½–2 cups raisins (220–300 g)
- 3 Tbsp cinnamon (24 g)
Instructions
1. Combine the water, milk, honey, yeast, and vanilla.
2. Add 5 cups (600 g) flour and the salt. Mix and knead 5–7 minutes, adding flour only as needed.
3. Toss raisins with cinnamon and knead into the dough until evenly dispersed.
4. Divide the dough in half, shape each piece into a loaf, and place into two greased 8.5×4.5-inch pans.
5. Rise 20–25 minutes in a warm spot.
6. Bake at 350°F (175°C) for 30 minutes.
7. Remove from pans, brush tops with melted butter, and cover with a tea towel to cool.
