Old Fashioned Gingerbread Loaf
Ingredients
· 1/2 cup softened butter (113 g)
· 1/2 cup packed brown sugar (100 g)
· 1/2 cup molasses (170 g)
· 2 large eggs (100 g total)
· 1 teaspoon vanilla extract (4 g)
· 2 cups all-purpose flour (240 g) (or 240 g fresh milled soft white)
· 1 teaspoon baking soda (5 g)
· 1/2 teaspoon salt (3 g)
· 2–3 teaspoons ground ginger (4–6 g)
(2 tsp for mild, 3 tsp for bold ginger flavor)
· 1 teaspoon ground cinnamon (2.6 g)
· 1/2 teaspoon nutmeg (1 g)
· 1/4 teaspoon cloves (0.5 g)
· 1/4 teaspoon allspice (0.5 g)
· 1 cup buttermilk (240 g)
OR:
• 4 Tbsp buttermilk powder + 1 cup (240 g) water
• 1 cup milk (240 g) + 1 Tbsp (15 g) vinegar or lemon juice
Instructions
1. Preheat oven to 350°F. Grease an 8.5×4.5-inch or 9×5-inch loaf pan.
2. Using a mixer, cream butter (113 g) and brown sugar (100 g).
3. Add molasses, eggs, and vanilla and mix well.
4. Add flour, baking soda, salt, ginger, cinnamon, nutmeg, cloves, and allspice.
5. Start the mixer and slowly pour in the buttermilk. Mix until just combined — a few lumps are okay.
6. Pour into the prepared loaf pan and bake 50–60 minutes, or until a toothpick comes out clean.
7. For mini loaves, bake 25–35 minutes.
