Nantucket Cranberry Pie

This classic Nantucket Cranberry Pie is an easy, old-fashioned dessert made with fresh or frozen cranberries, pecans, and a buttery almond-flavored topping. It comes together quickly and bakes up perfectly sweet-tart with a crunchy sugar topping. Perfect for Thanksgiving, Christmas, or any holiday gathering, this recipe uses simple ingredients and no crust — just mix, pour, and bake!

Nantucket Cranberry Pie

Ingredients

·       2 cups (200 g) fresh or frozen cranberries

·       1/2 cup (60 g) chopped pecans

·       2/3 cup (135 g) sugar

Batter

·       1 cup (120 g) all-purpose flour or fresh milled soft wheat

·       1 cup (200 g) sugar

·       1/2 cup (113 g) butter, melted

·       2 large eggs

·       1 teaspoon (5 g) almond extract

·       1/4 teaspoon (1.5 g) salt

Topping

·       1 tablespoon (12 g) sugar


Instructions

1.   Preheat oven to 350°F (175°C).

2.   Spread cranberries and pecans evenly in a pie plate.

3.   Sprinkle 2/3 cup (135 g) sugar evenly over the top.

4.   In a mixing bowl, mix flour, sugar, melted butter, eggs, almond extract, and salt until smooth.

5.   Pour batter evenly over the cranberry mixture.

6.   Bake at 350°F for 40–45 minutes, or until a toothpick inserted in the center comes out clean.

7.   Sprinkle 1 tablespoon (12 g) sugar over the top during the last 5 minutes of baking for extra crunch.

8.   Cool slightly before slicing.
