My Favorite Bread Machine Recipe - White Bread

This is our family's favorite white yeast bread recipe made in the bread maker! It really is the best bread machine bread recipe! After years of failed bread machine recipe loaves, I found this one and have been making it for years and years. This is honestly a tried, tested, and true favorite bread machine recipe and it's so easy! It uses basic staples that are in every prepared pantry. Throw these simple ingredients into your bread maker, walk away, and in just 3 hours you will have the best, most delicious homemade white bread loaf to enjoy with your family. And your home will smell wonderful! Try it and enjoy!

THE BEST Bread Machine Recipe

1 lb loaf

  • ½ cup warm water (120 g)
  • 1 ¾ cups bread or all-purpose flour (225 g)
  • 1 ½ Tbsp sugar (19 g)
  • 3 Tbsp milk (40 g) or 1 Tbsp dry milk (5 g) + 3 Tbsp water (40 g)
  • 2 Tbsp oil or melted butter (27 g)
  • ¾ tsp salt (4–5 g)
  • ¾ tsp yeast (2.5 g)

1.5 lb loaf

  • ¾ cup warm water (180 g)
  • 2 ¾ cups bread or all-purpose flour (338 g)
  • 2 Tbsp sugar (29 g)
  • ¼ cup milk (60 g) or 1 ½ Tbsp dry milk (7 g) + ¼ cup water (60 g)
  • 3 Tbsp oil or melted butter (41 g)
  • 1 tsp salt (6 g)
  • 1 ⅛ tsp yeast (3.5 g)

2 lb loaf

  • 1 cup warm water (240 g)
  • 3 ¾ cups bread or all-purpose flour (450 g)
  • 3 Tbsp sugar (38 g)
  • ⅓ cup milk (80 g) or 2 Tbsp dry milk (10 g) + ⅓ cup water (80 g)
  • ¼ cup oil or melted butter (55 g)
  • 1 ½ tsp salt (9 g)
  • 1 ½ tsp yeast (5 g)

Bread Machine (Full Cycle)

1.   Add all ingredients to the bread machine pan in the order listed.

2.   Select your preferred crust color, choose the Basic/White Bread setting, and press start.

3.   After 5 minutes, check your dough:

o   If it’s too wet and sticky, add flour a little at a time (about 1 Tbsp or 1/8 cup) until a smooth ball forms.

o   If it’s crumbly and dry, add 1 Tbsp water or milk, let it knead, then check again.

4.   Once the dough looks like a smooth, elastic ball, close the lid and let the machine finish the cycle.

5.   When baking is complete, remove the bread from the pan immediately (this prevents a soggy crust from steam).

6.   Cool on a rack, brush with butter if desired, and cover with a tea towel for a soft crust. Slice once completely cooled.


Bread Machine (Dough Cycle)

1.   Follow the same steps as above, but select the Dough Cycle instead. (This usually takes about 90 minutes.)

2.   When the cycle is finished, remove the dough, press it out gently, and shape into a loaf.

3.   Place in a well-oiled loaf pan (an 8.5 x 4.5 inch pan works perfectly for the 1.5 lb recipe).

4.   Cover loosely and let rise until the dough has just risen above the pan’s edge.

5.   Bake in a preheated 350°F (175°C) oven for about 30 minutes.

6.   Remove immediately from the pan, brush with butter if desired, and cover with a tea towel while cooling.

7.   Slice once completely cooled for the best texture and crumb.


Stand Mixer Method

1.   For a standard loaf pan (8.5 x 4.5 inch), use the 1.5 lb recipe. You can also double the recipe for 2 loaves.

2.   Add all ingredients (except cheese, if using) to the bowl of a stand mixer.

3.   Using the dough hook, mix on low speed (1) for 1–2 minutes until combined.

4.   Adjust dough if needed:

o   If too wet, add flour 1 Tbsp at a time until it pulls away from the sides of the bowl.

o   If too dry, add 1 Tbsp water or milk at a time until smooth.
(Tip: Weather, altitude, and season can affect dough. Read the dough, not just the recipe!)

5.   Knead on medium-low speed (2) for about 8 minutes. If adding cheese, mix it in during the last minute.

6.   Cover the bowl with a damp towel and let rise for 45–60 minutes, or until puffy and doubled in size.

7.   Punch down the dough, shape into a loaf, and place in a well-oiled loaf pan.

8.   Let rise again until the dough has just crowned over the pan (20–60 minutes, depending on conditions).

9.   Bake in a preheated 350°F (175°C) oven for 30 minutes.

10.                Remove immediately from the pan, brush with butter, and wrap in a towel while cooling for a soft crust.

11.                Slice once completely cooled.
