Make this quick Honey Oat No Knead Artisan Bread—no overnight rise needed! This easy homemade bread comes together with simple pantry ingredients, just one short rise (about 1 to 1½ hours), and a cold oven bake—no preheating required.
This bread has a golden, crisp crust with a soft, tender crumb and just a touch of sweetness from the honey. The oats add a hearty, wholesome texture, making it perfect for toast, sandwiches, or serving warm with butter and honey.
If you’ve wanted to try no knead bread but didn’t want to wait overnight, this is the perfect recipe for you—simple, fast, and beginner-friendly.
Honey Oat No Knead Artisan Bread
3 3/4 cups bread or all-purpose flour (450 g)
1 cup quick or old-fashioned oats (90 g)
2 1/4 tsp yeast (7 g)
2 tsp salt (12 g)
2 cups warm water (480 g)
1/4 cup honey (85 g)
Whisk together the flour, oats, yeast, and salt in a large bowl.
Dissolve the honey in the water, then add to the dry ingredients. Mix with a danish dough whisk or spurtle until a shaggy dough forms.
Cover the bowl and let rise for 1-1 ½ hours.
Turn the dough out onto a lightly floured surface and shape gently into a round boule. If the dough is very sticky, toss in flour to make it easier to handle.
Place the dough onto a dough sling or parchment paper. Cover and let rise/rest for 30 minutes.
After 30 minutes, sprinkle dough with oats, score the dough with a bread lame, place into a cold Dutch oven (I like placing a trivet in the bottom of my Dutch oven), place lid on top, and into a cold oven. Then set oven to 425 degrees F, and set timer for 40 minutes starting now. After 40 minutes, take lid off, and let brown for 5-10 minutes. Alternatively, you can bake in a preheated 425-degree oven (and hot/preheated Dutch oven) for 30 minutes covered, and 10 minutes uncovered.
Remove the loaf from the Dutch oven immediately, and let cool before slicing for the best texture and crumb. Makes wonderful sandwich bread and snacking bread with honey!
