Homemade Hot Dog Buns (New England Style)

These soft, rich hot dog buns are perfect for cookouts, picnics, or family dinners. They have a beautiful golden crust, a fluffy texture, and that perfect homemade flavor.


Ingredients

·       ¾ cup (180 g) lukewarm milk

·       ¼ cup (60 g) lukewarm water

·       6 tablespoons (85 g) melted butter

·       3 tablespoons (38 g) sugar

·       3 cups (360 g) all-purpose flour

·       ½ cup (30 g) instant mashed potato flakes

·       1 ¼ teaspoons (8 g) salt

·       2 ¼ teaspoons (7 g or 1 packet) instant yeast


Instructions

1.   Make the Dough
Measure ingredients 
into the mixing bowl of a stand mixer in the order given. Mix on low speed for 1 minute, then check the consistency of the dough.

o   If the dough is too sticky, add 1 tablespoon of flour at a time.

o   If the dough is too dry, add 1 tablespoon of milk at a time.

2.   Knead
Knead on 
medium-low speed (speed 2) for 7 minutes, or until the dough is smooth and elastic.

3.   First Rise
Cover the bowl with a 
warm, damp tea towel and let rise for 1 hour, or until doubled in size.

4.   Shape the Buns
After rising, punch down the dough. Roll it out roughly to the 
length and width of your hot dog pan, then stretch and press the dough evenly into the pan.

5.   Second Rise
Cover again and let rise for about 
30 minutes, or until puffy.

6.   Bake
Preheat oven to 
350°F (175°C).
Bake for 
18 minutes with a greased heavy baking sheet on top of the pan to help the buns keep their shape.
For a golden finish, 
remove the baking sheet after 18 minutes and bake for 2–3 more minutes.

7.   Finish & Serve
Remove from the oven, cool slightly, then 
cut or pull apart.
