Homemade Buttermilk Bread in the Bread Machine
1 lb Loaf
- 3/4 cup buttermilk (or 3/4 cup milk + 2 tsp vinegar OR 3/4 cup water + 3 Tbsp buttermilk powder) (180 g)
- 3 Tbsp melted butter (42 g)
- 2 Tbsp sugar (25 g)
- 2 1/4 cups flour (270 g) ( or 350 g fmf + 1 egg + autolyze)
- 1 tsp salt (6 g)
- 1 tsp yeast (3.2 g)
1.5 lb Loaf
- 1 1/8 cups buttermilk (or milk + 1 Tbsp vinegar OR 1 1/8 c water + 4.5 Tbs buttermilk powder) (270 g)
- 4 1/2 Tbsp melted butter (63 g)
- 3 Tbsp + 1 1/2 tsp sugar (37.5 g)
- 3 3/8 cups flour (405 g) (or 540 g fmf + 1 egg + autolyze)
- 1 1/2 tsp salt (9 g)
- 1 1/2 tsp yeast (4.8 g)
2 lb Loaf
- 1 1/2 cups buttermilk (or milk + 2 Tbsp vinegar OR 1 1/2 c water + 6 Tbs buttermilk powder) (360 g)
- 6 Tbsp melted butter (84 g)
- 4 Tbsp sugar (50 g)
- 4 1/2 cups flour (540 g) (or 700 g fmf +1 egg + autolyze)
- 2 tsp salt (12 g)
- 2 tsp yeast (6.4 g)
Instructions (All Sizes)
- Add ingredients to bread machine in order given.
- Select Basic/White Loaf cycle.
- Check dough after 3-5 minutes:
- If too wet, add flour 1 Tbsp (8 g) at a time, or if too dry, add milk.
- Dough should form a smooth, soft ball.
- Remove loaf immediately after the cycle for a softer crust.
- Brush with butter, cover with a tea towel, and cool before slicing. Enjoy your loaf of homemade buttermilk bread!
