Fresh Milled Flour Pizza Dough (Stand Mixer)
Makes 2 Pizzas
355 g warm water (1½ cups)
21 g honey or 12 g sugar (1 tablespoon)
28 g olive oil (2 tablespoons)
9 g salt (1½ teaspoons)
500 g fresh milled flour (about 2¾ cups hard wheat berries, milled into approximately 4 cups flour)
7 g instant yeast (2¼ teaspoons) add after autolyze
Instructions
- Add the warm water, honey (or sugar), olive oil, salt, and fresh milled flour to the bowl of a stand mixer. Mix just until a shaggy dough forms and no dry flour remains.
- Cover and let the dough rest for 30 minutes. This autolyze helps soften the bran and creates a lighter, more tender fresh milled pizza crust.
- Sprinkle the instant yeast over the dough. Knead with the dough hook for about 10 minutes, or until the dough is smooth and elastic.
- Cover and let rise for 1 hour, or until puffy.
- Punch down the dough and divide it into 2 equal portions. Shape each portion into a ball. Use immediately or refrigerate for later use.
- When ready to bake, roll or stretch the dough into pizza crusts and place on prepared pizza pans or a baking stone. Top as desired.
- Bake in a preheated 475°F (245°C) oven for about 12 minutes, or until the crust is golden brown and the toppings are cooked through. Adjust baking time as needed for thicker or thinner crusts.
