4 Ingredient Fresh Milled Peasant Bread
4 cups fresh milled flour (480 g) — I used hard white wheat
2 teaspoon salt (12 g)
1 Tbs instant yeast (12 g)
2 cup warm water (480 g)
Instructions
1. In a mixing bowl, whisk together the fresh milled flour, salt, and yeast. Add the warm water and mix until well combined.
2. Cover the bowl and let the dough rise for 1 to 1½ hours.
3. Using your hands or a rubber spatula, gently pull the dough away from the sides of the bowl and gather it toward the center. Scoop the dough onto a pie plate, baking sheet, or any oven-safe baking vessel, including a glass bowl.
4. Let the dough rise on the countertop while the oven preheats to 425°F (220° C)
5. Once the oven is preheated, bake for 15 minutes. Without opening the oven door, reduce the temperature to 375°F (190° C) and continue baking for another 15-20 minutes, or until the loaf is golden brown.
6. The bottom of the loaf should sound hollow when tapped.
7. Let cool before slicing for the best texture and crumb.
