A soft, honey-sweetened bakery-style loaf made with freshly milled wheat, warm spices, and plenty of fruit and nuts.
There are few things as comforting as a homemade loaf of bread, and this fresh-milled Fruit & Nut Bread is one of those recipes you’ll want to bake again and again. It’s naturally sweetened with honey (or maple syrup), filled with your favorite dried fruit and chopped nuts, and gently spiced with cinnamon and nutmeg. The result is a tender, flavorful loaf that’s perfect for breakfast, gifting, or enjoying warm with a little butter.

Fresh-Milled Flour Fruit & Nut Bread
Ingredients (Makes 2 loaves)
- 1 cup warm water (240 g)
- 1 cup warm milk (240 g)
- 1/4 cup melted butter or oil (56 g)
- 1/3 cup honey or maple syrup (113 g)
- 2 large eggs
- 2 teaspoons vanilla extract (10 g)
- 750 g freshly milled flour (I used hard white winter wheat)
- You may need an additional 50–100 g after autolyse
- 2 teaspoons salt (12 g)
- 2 teaspoons cinnamon (5–6 g)
- 1/2 teaspoon nutmeg (1 g)
- 2 1/2 teaspoons instant yeast (8 g) — add after autolyse
Mix-Ins
- 1.5 cups dried fruit (cranberries, cherries, golden raisins, etc.) (220–240 g)
- 1/2 cup chopped walnuts or pecans (60 g)
Instructions
INSTRUCTIONS

Add everything except yeast into your mixer bowl. Mix 1 minute.

Let rest 15 minutes to 3 hours (autolyse).

Sprinkle yeast on top and begin kneading.

Add 50–100 g flour as needed until dough pulls away from sides and bottom.

Knead 12–25 minutes or until windowpane.

Let rise in oiled bowl until doubled (1 to 1.5 hours).

Punch down, divide, shape, and place into greased loaf pans.

Rise 45–60 minutes or until 1" above pan.

Bake at 350°F for 35 minutes. Tent if browning too fast.

Remove from pans, butter tops, cover with tea towel, and cool fully.
