Fluffy Fresh-Milled Buttermilk Maple Pancakes

Fluffy Fresh-Milled Buttermilk Maple Pancakes

These fluffy fresh milled flour buttermilk maple pancakes are full of homemade goodness! Made with freshly milled soft white wheat and your choice of ancient grains, these pancakes have a tender texture, delicious flavor, and a touch of maple sweetness. I'll show you how to make these from scratch, with fresh-milled whole grains that make a wonderful breakfast for the whole family. Soft white wheat is a great choice for tender pancakes, and adding ancient grains like spelt, einkorn, Kamut (Khorasan), or emmer gives you even more delicious flavor & added nutrition.

Fresh-Milled Buttermilk Maple Pancakes

2 c (240 g) fresh-milled soft white wheat flour

*or 180 g soft white wheat flour + 60 g ancient grain flour (Khorasan/kamut, spelt, einkorn, or emmer)

2½ tsp baking powder

½ tsp baking soda

½ tsp salt

1½ c (360 g) buttermilk

2 large eggs

2 Tbsp (40 g) pure maple syrup

3 Tbsp (45 g) melted butter, slightly cooled

1 tsp vanilla extract

Organic Amber Pure Maple Syrup, for serving

Instructions

1.   In a large bowl, whisk together the fresh-milled soft white wheat flour, baking powder, baking soda, and salt.

2.   In a separate bowl, whisk together the buttermilk, eggs, maple syrup, melted butter, and vanilla extract.

3.   Pour the wet ingredients into the dry ingredients and gently stir just until combined. Do not overmix.

4.   Let the batter rest for 5-10 minutes while you preheat a griddle over medium heat. This gives the fresh-milled flour a little extra time to absorb the liquid.

5.   Pour the batter onto the preheated griddle to make pancakes of your desired size. Cook until bubbles form on the surface and the edges begin to look set.

6.   Flip and cook the other side until golden brown and cooked through.

7.   Serve warm with butter and pure maple syrup.
