Favorite Brownies made with Fresh Milled Flour

These fudgy brownies are made with fresh milled soft white wheat flour (or spelt, emmer, einkorn, or khorasan!) and baked in a cast iron skillet for rich chocolate flavor and a perfectly soft center. This is an easy homemade brownie recipe using simple ingredients, and it's a great way to use fresh milled flour in desserts. If you're milling your own wheat, this recipe shows just how delicious whole grain brownies can be—soft, chocolatey, and not dry at all. Bake them in a cast iron skillet or an 8x8 pan for a quick dessert your family will love.
NOTE! You can also use all-purpose flour or store bought whole wheat flour in these brownies if you don't home mill your flour!
Favorite Fresh Milled Brownies
Ingredients
- 1 stick (1/2 cup / 113 g) butter, melted
- 1 cup (200 g) sugar
- 2 large eggs
- 1 1/2 tsp (7 g) vanilla extract
- 1/2 cup (60 g) fresh milled soft white wheat, spelt, einkorn, emmer, or kamut
- 1/2 tsp (3 g) salt
- 1/2 tsp (2 g) baking powder
- 1/2 cup (50 g) unsweetened cocoa powder
- 1/2 cup (85 g) chocolate chips
Instructions
Freshly mill 60 g of grain into flour. My preferred grains for these brownies are soft white wheat, spelt, einkorn, or kamut.
Then simply add all ingredients into a medium-sized mixing bowl, and mix until combined.
Fold in the chocolate chips. If you’d like, you can also add ½ c of nuts.
Transfer the batter to an oiled 8-inch or 9-inch cast iron skillet or an 8×8 baking dish.
Let batter rest for 10 minutes or as the oven preheats to soften.
Bake at 350°F (175°C) for 20-28 minutes. Bake time will vary. Mine baked in an 8” cast iron skillet for 25 minutes, but check even earlier for a 9-inch skillet or 8×8 pan since the brownie will be thinner. Bake to personal preference!

This is the BEST brownie recipe I have ever tried. I just started milling my own grain in February 2026 and I’ve already made this brownie recipe 5 or 6 times in one month for friends, family and coworkers and EVERYONE loves them. My son requested them for his birthday treat. I love that the recipe is so easy and fast to put together. I have watched many of your videos and as a beginner I appreciate the all the details and the “why” you are doing certain things a certain way. You are a wonderful teacher. The very first bread recipe I tried after getting my mill and my Zojirushi bread machine was your Honey wheat bread and it was a huge success. Thank you so much for all you do and all you have taught me thus far on my freshly milled flour journey! Gotta go check on my brownies now. :)
