Bread Machine Milk Chocolate Babka Bread
2 lb Loaf:
1 c sourdough starter
or discard (240g)
1⁄2 c milk (120g)
2 eggs
1/4 cup melted butter (57g)
1⁄4 c sugar (50g)
1 tsp salt (6g)
2 tsp vanilla (10g)
3 3/4 cups flour (470)
1.5 tsp yeast (4.5g)
1 c milk chocolate chips or chunks (170g)
1.5 lb Loaf:
3/4 c sourdough
starter discard (180g)
6 Tbsp milk (90g)
1 egg
3 Tbsp melted butter (43g)
3 Tbsp sugar (38g)
1 tsp salt (6g)
1 1⁄2 tsp vanilla (7.5g)
2 3⁄4 c flour (353g)
1 1/8 tsp yeast (3.4g)
3⁄4 c milk chocolate chips or chunks (128g)
1 lb Loaf:
1/2 c sourdough
starter or discard (120g)
1⁄4 c milk (60g)
1 egg
2 Tbsp melted butter (28g)
2 Tbsp sugar (25g)
1⁄2 tsp salt (3g)
1 7/8 c flour (235g)
3/4 tsp yeast (2.25g)
1⁄2 c milk chocolate chips or chunks (85g)
Instructions:
Place the ingredients into your bread loaf pan in the order listed (wet before dry in a bread machine). Choose a white basic loaf, select the color of your crust, and press start. After about 5 minutes, be sure your ball of dough isn't sticking to the sides or bottom of the loaf pan or paddle. If it isn't coming together into a nice ball of dough, add 1/8 c more flour until it does. Or, if it looks crumbly and not smooth, add about 1 Tbsp of milk until it looks smooth like mine. Once the mix in signal sounds, add the milk chocolate. If your machine doesn’t have this feature, add the chocolate after 10-15 minutes. Adding too soon will result in dense, unrisen bread! Close the lid and your loaf of bread will be ready in about 3 hours! Remove immediately from bread machine pan for best results (can get a bit soggy due to the steam). Brush with butter if desired and cover to cool. Cut after completely cooled for best crumb and crumble.
