This fresh-milled flour batter bread is the easiest way to bake soft, wholesome homemade bread — even if you’re brand new to using a grain mill! 🌾 No kneading, no mixer, no special equipment — just a bowl, a spoon, and your freshly milled flour. This simple recipe gives you a tender, sliceable loaf packed with whole-grain flavor and nutrition. Fresh-Milled Flour No-Knead Batter Bread
Ingredients
· 1⅓ cups (315 g) lukewarm water
· 3 tablespoons (43 g) melted butter or oil
· 2 tablespoons (42 g) honey
· 1 tablespoon (10 g) instant yeast
· 3½ cups (400 g) freshly milled whole wheat flour (hard white or hard red)
· 1 tablespoon (10–12 g) vital wheat gluten (optional, for better rise and texture)
· 1 teaspoon (6 g) salt
Instructions
1. Mix the batter
In a large mixing bowl, combine all ingredients. Stir well for about 2 minutes, until the batter is smooth and no dry flour remains.
2. First rise
Cover the bowl and let the batter rise at room temperature for about 45 minutes, or until puffed and airy.
3. Prepare the pan
Grease an 8½ x 4½-inch loaf pan generously.
4. Stir down and fill
Stir down the risen batter, then pour it into the prepared loaf pan. Smooth the top with a spatula.
5. Second rise
Let the batter rest for about 10 minutes, or until your oven has preheated to 350°F (175°C).
6. Bake
Bake for 30 minutes, or until golden brown.
7. Cool
Turn the loaf out of the pan immediately after baking. Brush with butter, cover with a tea towel and let cool before slicing.
8. Enjoy
Slice and enjoy your soft, wholesome loaf made with fresh-milled whole grain flour — no kneading or special equipment needed!
