Cottage cheese may sound like an unusual ingredient, but it adds extra protein, moisture, and richness while creating a wonderfully tender crumb. This easy stand mixer recipe makes two beautiful loaves with a soft texture that stays fresh for days. Whether you're making sandwiches, toast, or simply enjoying a warm slice with butter, this bread is sure to become a family favorite.
Cottage Cheese Bread (Stand Mixer Recipe)
Ingredients Makes 2 Loaves
1 cup warm water (240 g)
2 Tbs sugar (24 g)
2 ½ tsp instant yeast (8 g)
4 Tbs salted butter, melted (56 g)
2 large eggs
1 c cottage cheese (225 g)
6 c bread flour (720) adjust as needed due to cottage cheese hydration
2 ½ tsp salt (15 g)
Stand Mixer Instructions
- Add all ingredients to the bowl of a stand mixer. Mix on low speed until combined.
- Knead on medium-low speed (2–3) for 6–8 minutes, until the dough is smooth and slightly tacky.
- Place the dough in a lightly greased bowl, cover, and let rise for about 1 hour, or until doubled in size.
- Divide the dough in half. Shape into 2 loaves and place into greased 8½ × 4½-inch or 9 × 5-inch loaf pans.
- Cover and let rise for about 30 minutes, or until the dough has risen about 1 inch above the rim of the pan.
- Bake at 350°F (177°C) for 30–35 minutes, until golden brown and the center reaches 190°F (88°C).
- Remove from pans, brush with butter, cover with a tea towel and cool completely before slicing for best slices and crumb.
- Store in a beeswax bread bag!
To make with freshly milled flour, use the same weight of flour, and add a 45+ minute autolyze before adding yeast. The addition of 1 Tbs of vital wheat gluten and 1 Tbs sunflower lecithin is optional.
