Cinnamon Sugar Swirl Quick Bread Recipe
Ingredients
1 egg
1/3 cup oil (70 g)
1 cup milk (240 g)
1 teaspoon vanilla (5 g)
2 cups all-purpose flour (240 g) *or fresh milled soft white wheat, spelt, etc
1 tablespoon baking powder (12 g)
1/2 teaspoon salt (3 g)
1 cup sugar (200 g)
Cinnamon Swirl
1/3 cup sugar (67 g)
2 teaspoons ground cinnamon (5 g)
Instructions
Combine 1/3 cup sugar (67 g) and 2 teaspoons cinnamon (5 g) in a small bowl and set aside.
In a medium bowl, whisk together the egg, oil, milk, and vanilla. Add the flour, baking powder, salt, and 1 cup sugar. Mix until just combined.
Pour half of the batter into a greased loaf pan. Sprinkle the cinnamon–sugar mixture over the top. Spoon the remaining batter on top of the cinnamon layer. Use a knife to gently swirl the batter to create a marbled effect.
Bake in a preheated 350°F (177°C) oven for 45–50 minutes, or until a toothpick inserted into the center comes out clean. Let the loaf cool before slicing. Enjoy!
