Christmas Eggnog Quick Bread with Glaze

Christmas Eggnog Quick Bread with Glaze

Bread:

  • 1 cup butter (2 sticks) (226 g)
  • 2 cups white sugar (400 g)
  • 4 eggs
  • 1 Tbsp vanilla extract (13 g)
  • 2.5 cups eggnog (600 g)
    (1 cup eggnog ≈ 240 g)
  • 4.5 cups all-purpose flour (540 g) (or 540 g fresh milled soft wheat)
    (1 cup AP flour ≈ 120 g)
  • 4 tsp baking powder (16 g)
  • 1 tsp salt (6 g)
  • 3.4 oz instant vanilla pudding mix (96 g)
  • 1/2 tsp ground nutmeg (1 g)

Eggnog Glaze:

  • 2 cups powdered sugar (240 g)
  • 2 Tbsp melted butter (28 g)
  • 1 tsp vanilla extract (4 g)
  • 2–4 Tbsp eggnog (30–60 g) (or milk)

Yields

  • 2 large loaves, or
  • 6 mini loaves, or
  • 1 large + 3 mini

Instructions

1.   Cream the butter (226 g) and sugar (400 g) together.

2.   Add the eggs and vanilla; beat well.

3.   Pour in the eggnog (600 g); mix again.

4.   Add all dry ingredients and mix just until combined—do not overmix.

5.   Pour batter into greased loaf pans.

6.   Bake at 350°F (175°C):

o   Large loaves: ~50 minutes

o   Mini loaves: ~35 minutes

o   Or until the center tests done.

7.   Glaze when mostly cool.
