Cast Iron Chocolate Chip Cookie

Cast Iron Chocolate Chip Cookie

1 cup salted butter, softened (227 g)

1 cup brown sugar, packed (220 g)

½ cup sugar (100 g)

2 large eggs

1 tablespoon vanilla extract (15 g)

2 ½ cups all-purpose flour or fresh milled soft white wheat (300 g)

1 tsp baking soda (5 g)

1 2/3 cups chocolate chips (283 g)

Method

Cream together the softened butter, brown sugar, and white sugar for 3 minutes. After 2 minutes, add the eggs and vanilla and let them beat for 1 minute. Add flour and baking soda, and mix just until combined. Fold or mix in chocolate chips. Spread cookie dough into a 10-inch cast iron skillet (or 8x8 baking dish) and smooth the top. Bake in a 350 F (180 C) oven for 30-35 minutes, or until done to your liking. This giant cookie will finish baking and set up as it cools, just like smaller cookies. Slice like a pie or into squares and enjoy! Delicious with vanilla ice cream!
