Butterscotch Pudding Pumpkin Quick Bread
Ingredients:
· 1 ¾ cups all-purpose flour (220 g) (Fresh milled flour option: 220 g soft white wheat, or 70 g hard wheat + 70 grams soft wheat + 70 grams spelt or kamut, or 110 grams hard wheat +110 grams soft wheat)
· 1 (3.4 oz) box instant butterscotch pudding mix, dry powder (96 g)
· 1 tablespoon baking powder (12 g)
· 1 teaspoon baking soda (6 g)
· 2 teaspoons pumpkin pie spice (6 g) (Substitute: 1 teaspoon ground cinnamon, ½ teaspoon ground ginger, ¼ teaspoon ground nutmeg, and ¼ teaspoon ground allspice or cloves)
· 1 teaspoon ground cinnamon (3 g)
· ½ cup unsalted butter, melted (113 g)
· ¾ cup packed brown sugar (150 g)
· 1 (15 oz) can or about 2 scant cups pure pumpkin purée (425 g)
· 2 large eggs (about 100 g total)
Instructions
1. Preheat the oven to 350°F (175°C). Grease and lightly flour an 8.5 x 4.5-inch or 9 x 5-inch loaf pan, or line it with a loaf liner.
2. Mix the dry ingredients:
In a large bowl, whisk together the flour, butterscotch pudding mix, baking powder, baking soda, pumpkin pie spice, and cinnamon until evenly combined.
3. Add the wet ingredients to the dry ingredients. Stir gently until just combined—do not overmix.
4. Pour and bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. Place foil over top near the end of baking if over browning.
5. Cool:
Allow the bread to cool in the pan for 10–15 minutes, then remove from loaf pan to cool.
