Brown Sugar Oatmeal Bread | Bread Machine 1 lb, 1.5 lb, 2 lb Loaf

Make the best brown sugar oatmeal bread in your bread machine! This soft and slightly sweet homemade bread combines hearty oats with the rich flavor of brown sugar. It’s perfect for sandwiches, toast, or fresh out of the oven with butter. In this video, I’ll show you how to make oatmeal bread using both the bread machine bake cycle and the dough cycle (to shape and bake in the oven). I’ve also included a printable recipe with instructions for 1 lb, 1.5 lb, and 2 lb loaves, so no matter the size of your bread machine, you can enjoy this delicious bread at home. This is a family favorite bread machine recipe—easy to make, perfectly fluffy, and full of flavor.

Bread Machine Brown Sugar Oat Bread

2 lb Loaf

  • 1 1/2 cups milk (360 g)
  • 4 Tbsp melted butter (56 g)
  • 1/3 cup packed brown sugar (67 g)
  • 3 1/3 cups bread flour (400 g) (500 g fresh milled flour)
  • 1 cup oats (100 g)
  • 1 1/2 tsp salt (9 g)
  • 2 tsp yeast (6 g)

1.5 lb Loaf

  • 1 cup + 2 Tbsp milk (240 g)
  • 2 1/2 Tbsp melted butter (35 g)
  • 1/4 cup + 2 tsp packed brown sugar (50 g)
  • 2 1/2 cups + 2 Tbsp bread flour (300 g) (415 g fresh milled flour)
  • 3/4 cup oats (75 g)
  • 1 tsp salt (6 g)
  • 1 1/2 tsp yeast (4.5 g)

1 lb Loaf

  • 3/4 cup milk (180 g)
  • 2 Tbsp melted butter (28 g)
  • 3 Tbsp packed brown sugar (33 g)
  • 1 2/3 cups bread flour (200 g) (255 g fresh milled flour)
  • 1/2 cup oats (50 g)
  • 3/4 tsp salt (4.5 g)
  • 1 tsp yeast (3 g)

Bread Machine (Dough Cycle)

1. Add all ingredients to your bread machine loaf pan in the order listed.

2. Select the Dough Cycle on your machine (approximately 90 minutes).

3. When the dough cycle is complete, remove the dough from the pan, gently press it out, and shape it into a loaf.

4. Place the shaped dough into a well-oiled bread loaf pan.

5. Let the dough rise until it reaches just over the edge of the pan.

6. Preheat your oven to 350°F (175°C) and bake for 30 minutes.

7. Remove the loaf immediately from the pan to prevent sogginess from steam.

8. Optional: Brush with butter and cover with a clean tea towel to cool.

9. Slice after completely cooled for best crumb and texture.

Note: For this recipe, I made the 2 lb recipe and baked in an 8.5x4.5 in loaf pan. You can also divide the dough in half after the dough cycle, and bake in two 8.5×4.5 inch loaf pans for 28 minutes or a 10x5 inch loaf pan for 30 minutes. I typically make a 1.5 lb recipe and bake in one 8.5x4.5-inch loaf pan.
