Bread Machine Sweetened Condensed Milk Bread (+ Stand Mixer Instructions)

This sweetened condensed milk bread is incredibly soft, fluffy, and perfect for sandwiches, toast, or enjoying warm with butter. Simply add the ingredients to your bread machine and bake using the Basic cycle, or use the Dough cycle and bake it in your oven for a beautiful homemade loaf. This recipe creates a tender crumb, rich flavor, and bakery-style texture that stays soft for days. This is an easy recipe for bread machine beginners or those just looking for a great new bread machine recipe to try! I've included the 1 lb, 1.5 lb, and 2 lb recipes in both weight (grams) and volume (cups) on the printable recipe below.

104 g sweetened condensed milk (⅓ cup)
240 g bread flour (2 cups)
6 g salt (1 teaspoon)
3 g instant yeast (1 teaspoon)

1½-Pound Loaf (the size I made)

198 g lukewarm water (7/8 cup or ¾ cup + 2 tablespoons)
14 g salted butter, melted (1 tablespoon)
156 g sweetened condensed milk (½ cup)
360 g bread flour (3 cups)
9 g salt (1½ teaspoons)
4.5 g instant yeast (1½ teaspoons)

2-Pound Loaf

264 g lukewarm water (1 cup + 2 tablespoons)
19 g salted butter, melted (1 tablespoon + 1 teaspoon)
208 g sweetened condensed milk (⅔ cup)
480 g bread flour (4 cups)
12 g salt (2 teaspoons)
6 g instant yeast (2 teaspoons)

Bread Machine

  1. Add the ingredients to the bread machine pan in the order recommended by the manufacturer.
  2. Select the Basic/White Bread cycle and choose the loaf size that matches your recipe (1 lb, 1½ lb, or 2 lb).
  3. Select your preferred crust color.
  4. When baking is complete, remove the loaf from the pan immediately.
  5. Brush the top with butter, if desired, and cool on a towel-lined surface covered with a clean tea towel for the softest crust.

Bread Machine Dough Cycle

  1. Add the ingredients to the bread machine pan in the order recommended by the manufacturer.
  2. Select the Dough cycle.
  3. When the cycle is complete, transfer the dough to a lightly floured surface and gently shape into a loaf.
  4. Place in a greased loaf pan:
    • 1 lb: 8 × 4-inch pan
    • 1½ lb: 8½ × 4½-inch pan
    • 2 lb: 9 × 5-inch pan or divide into 2 loaves
  5. Cover and let rise until the dough crowns about 1 inch (2.5 cm) above the rim of the pan, about 45–60 minutes.
  6. Bake at 350°F (175°C) for:
    • 1 lb: 28–32 minutes
    • 1½ lb: 30–35 minutes
    • 2 lb: 35–40 minutes
  7. The bread is done when it reaches an internal temperature of 190–200°F (88–93°C).
  8. Remove from the pan immediately. Brush with butter, if desired, and cool under a clean tea towel before slicing.

Stand Mixer

  1. Add the water, melted butter, sweetened condensed milk, bread flour, salt, and instant yeast to the bowl of a stand mixer.
  2. Mix on low speed until combined, then knead for 8–10 minutes, until the dough is smooth, soft, and elastic.
  3. The dough should feel slightly tacky but not sticky. Add additional flour or water 1 tablespoon at a time if needed. The exact amount can vary depending on humidity and your flour.
  4. Place the dough in a lightly greased bowl. Cover and let rise until doubled, about 60–90 minutes.
  5. Gently deflate the dough and shape into a loaf.
  6. Place in the appropriate greased loaf pan:
    • 1 lb: 8 × 4-inch pan
    • 1½ lb: 8½ × 4½-inch pan
    • 2 lb: 9 × 5-inch pan or divide into 2 loaves
  7. Cover and let rise until the dough crowns about 1 inch (2.5 cm) above the rim of the pan, about 30-45 minutes
  8. Bake at 350°F (175°C) for the times listed above, or until the internal temperature reaches 190–200°F (88–93°C).
  9. Remove from the pan immediately. Brush with butter, if desired, and cover with a clean tea towel while cooling for the softest, most tender crust.
