Bread Machine Seeded Rye Bread (1, 1.5, 2 lb loaves)

Bread Machine Seeded Rye Bread

1.5 lb Loaf (the loaf size I made)

·       1 cup lukewarm water (240 g)

·       1 Tbsp brown sugar (12 g)

·       1 Tbsp olive oil (14 g)

·       1 tsp molasses (7 g)

·       1 cup dark rye flour (140 g) *or fresh milled rye grain, see note below

·       2 cups bread flour (250 g)

·       1 tsp cocoa powder (2 g)

·       2 Tbsp caraway seeds (16 g)

·       1.5 tsp instant yeast (5 g)

·       1.5 tsp salt (9 g)

1 lb Loaf

·       ¾ cup lukewarm water (180 g)

·       2 tsp brown sugar (8 g)

·       2 tsp olive oil (9 g)

·       ½ tsp molasses (3–4 g)

·       ⅔ cup dark rye flour (95 g)

·       1⅓ cups bread flour (165 g)

·       ½ tsp cocoa powder (1 g)

·       1 Tbsp caraway seeds (8 g)

·       1 tsp instant yeast (3 g)

·       1 tsp salt (6 g)

2-lb Loaf

·       1⅓ cups lukewarm water (320 g)

·       1 Tbsp + 1 tsp brown sugar (16 g)

·       1 Tbsp + 2 tsp olive oil (19 g)

·       1½ tsp molasses (10 g)

·       1⅓ cups dark rye flour (185 g)

·       2⅔ cups bread flour (335 g)

·       1½ tsp cocoa powder (3 g)

·       3 Tbsp caraway seeds (24 g)

·       2 tsp instant yeast (6–7 g)

·       2 tsp salt (12 g)

Bread Machine Instructions

1.  Add ingredients to the pan in the order listed: liquids  dry  yeast.

2.  Set machine to Basic/White cycle or Dough Cycle.

3.  After 3–5 minutes, check dough ball:

o   Too sticky  add 1 tbsp flour at a time

o   Too dry  add 1 tbsp water at a time

4.  Allow cycle to finish (about 3 hrs). If using the dough cycle, it will take about 1 ½ hours for the cycle to finish. Then press out, shape into a loaf, place in loaf pan, and let rise for about 45 minutes. Bake in a preheated 350-degree oven for 35 minutes or until golden.

5. Cool: Remove the loaf from the loaf pan or bread machine immediately if possible. Brush loaf with butter, cover with a tea towel and let cool before slicing.

To make this entirely with fresh milled flour: Increase water to 260 g, mill 120 g fresh milled dark rye, 240 grams hard white or red wheat, add an egg or 2 tsp sunflower lecithin. Autolyze dough without yeast for 45 minutes, then add 2 tsp (7 g) yeast and knead. I will share exactly how to do this soon!

Hi Robyn! Thank you for this recipe! I made this bread and was in awe of how delicious it truly was. I always appreciate the simplicity of your recipes (easy for me to veganize), but yet often they result in such complexity of flavor. This is one of my favorite breads for sure. Well I already love the cinnamon rolls so now (this week) I am going to try the lemon rolls I love lemon as much as I love cinnamon! I am going to have to increase my cardio for sure, lol!

I made the 1.5 loaf in my Zojirushi Plus yesterday and it turned out amazing! I had to add 2 TBSP of water because it was a bit on dry side, so thank you for that tip. I also substituted the seeds for 1 TBSP caraway, 1/2 TBSP dill seeds, 1/2 TBSP fennel seeds. I’m not sure that it matters but I did the last rise on the counter and preheated my cast iron loaf pan before transferring and cooking. Thank you for this recipe! I was in need of a good dark rye without a lot of sweetness.
