Fresh Milled Flour Banana Bread (Bread Machine)
This fresh milled whole wheat banana bread in the bread machine is soft, moist, and easy to make using freshly milled soft white wheat. If you’re looking for a simple bread machine banana bread recipe, this one turns out perfectly every time. Using fresh milled flour gives this banana bread a delicious flavor and tender texture.
You can use soft white wheat for the best texture, or try soft spelt or einkorn for a slightly different flavor.
For a 1.5–2 lb capacity bread machine
Ingredients

3 mashed bananas (about 360 g)

6 Tbsp melted butter or oil (84 g)

3/4 cup sugar (150 g)

1 large egg (50 g)

1 tsp vanilla (5 g)

1 1/2 cups fresh milled soft white wheat flour (180 g)

1 tsp baking soda (5 g)
-
1/4 tsp salt (1.5 g)
-
1/8 tsp nutmeg (0.25 g)
-
1/4 tsp ground cinnamon (0.6 g)

3/4 cup walnuts, pecans, or chocolate chips (optional) (90–130 g depending on add-in)
Instructions
Mill the grain. 180 g soft white wheat berries is about 1.5 cups of fresh milled flour.
Add all ingredients to the bread machine loaf pan.
Select the “Cake” or “Sweet Bread” setting on your bread machine. This setting usually runs about 2 hours. Do not use the “Quick” setting unless your machine specifically says it is for quick breads. On many machines, “Quick” is actually a shortened yeast bread cycle.
Start the machine and allow it to complete the full cycle.
When the cycle finishes, let the banana bread sit in the machine for 10 minutes.
Insert a toothpick into the center. If it comes out clean, it is done.
Remove the loaf from the pan and let cool on a rack, or slice and enjoy warm.
