Bread Machine English Muffin Bread for Toasting
1.5 lb Loaf
- 1 1/4 cup lukewarm milk (283 g)
- 1 tsp apple cider vinegar (5 g)
- 2 Tbsp melted butter (28 g)
- 1 Tbsp sugar or honey (21 g)
- 3 1/2 cups flour (420 g) (all purpose, bread, or fresh milled)
- 1/2 tsp baking powder (2 g)
- 2 1/4 tsp instant yeast (7 g)
- 1 3/4 tsp salt (10 g)
- 1 Tbsp cornmeal (10 g) (added at final rise/bake)
1 lb Loaf
- 3/4 cup + 1 Tbsp lukewarm milk (190 g)
- 3/4 tsp apple cider vinegar (3 g)
- 1 Tbsp + 1 tsp melted butter (19 g)
- 2 tsp sugar or honey (14 g)
- 2 1/3 cups flour (280 g)
- 1/3 tsp baking powder (1.5 g)
- 1 1/2 tsp instant yeast (4.5–5 g)
- 1 1/4 tsp salt (6.5–7 g)
- 1 Tbsp cornmeal (10 g) (added at final rise/bake)
2 lb Loaf
- 1 2/3 cups lukewarm milk (377 g)
- 1 1/3 tsp apple cider vinegar (7 g)
- 2 Tbsp + 2 tsp melted butter (37 g)
- 1 Tbsp + 1 tsp sugar or honey (28 g)
- 4 2/3 cups flour (560 g)
- 2/3 tsp baking powder (3 g)
- 3 tsp (1 Tbsp) instant yeast (9–10 g)
- 2 1/3 tsp salt (13 g)
- 1 Tbsp cornmeal (10 g) (added at final rise/bake)
Instructions
Place the ingredients into your bread machine bread pan in the order listed. Set your bread machine to a basic white cycle and choose the crust color you’d like. Check on your ball of dough about 5 minutes after it starts mixing and kneading. If it’s too wet, add 1/8 c more flour at a time until it forms a nice ball of dough. If it’s too dry or crumbly, add 1 Tbs of milk or water at a time, let it mix several minutes, until it forms a smoother, lighter ball of dough. During the final rise or right as it begins to bake (this is usually around 1-1/2 hour left on the cycle) mist with water and sprinkle 1 Tbs of cornmeal on the top for a traditional English muffin effect. When complete, remove the pan, cover with a tea towel, and let cool. Slice, toast, and serve with butter and jam! Store in a beeswax bread bag. You can also use the dough cycle, shape into a loaf, roll the dough in cornmeal, let rise in the loaf pan, and bake at 350 degrees for 30 minutes.
