Bread Machine Eggnog Quick Bread

Bread Machine Eggnog Quick Bread

Warm, cozy, and full of holiday flavor — this Bread Machine Eggnog Quick Bread is the perfect Christmas treat! This recipe is so easy because it’s made right in your bread machine using the Cake Cycle. No yeast, no kneading, just mix, scrape the sides, and let the machine do the work. This loaf comes out incredibly moist, sweet, and packed with eggnog, nutmeg, and cinnamon. Don’t forget the simple eggnog glaze — it takes this bread over the top!

Bread Machine Eggnog Bread (Quick Bread)

For a 1.5–2 lb bread machine

Ingredients (add in order listed)

¾ cup (180 g) cold eggnog
2 large eggs (100 g total)
¼ cup (56 g) melted butter
¼ cup (60 ml) oil
1 teaspoon vanilla extract (4 g)
¾ cup (150 g) sugar
2 cups (240 g) all-purpose flour or fresh milled soft white wheat
1 ½ teaspoons (6 g) baking powder
½ teaspoon (3 g) baking soda
½ teaspoon (3 g) salt
1 teaspoon (2 g) ground nutmeg
1 teaspoon (2 g) ground cinnamon

Glaze (optional but recommended!)

1 cup (120 g) powdered sugar
3–4 tablespoons (45–60 ml) eggnog
½ teaspoon (2 g) vanilla extract
1/8 teaspoon (0.5 g) ground nutmeg

Instructions

1.    Add ingredients to the bread machine in the order listed.

2.    Select the Cake or Quick Bread cycle (depending on your bread machine!)

3.    Let the machine mix for 2–3 minutes, then open the lid and scrape down the sides.

4.    Close the lid and let the machine run the full cycle.

5.    When the cycle finishes, leave the loaf inside the bread machine for 10 minutes.

6.    Remove the pan and let the bread cool in the pan for another 10 minutes.

7.    Carefully turn the loaf out to let it cool.

8.    Stir together glaze ingredients until smooth, then drizzle over the warm or cool loaf.
