Bread Machine Anadama Molasses Bread
2 lb Loaf: (my loaf)
1 1/4 c water (295g)
1.5 Tbs oil (20g)
1/4 c molasses (85g)
1.5 tsp salt (9g)
1/2 c cornmeal (75g)
3 1/4 c flour (400g)
2 tsp yeast (6g)
1.5 lb Loaf:
1 c water (220g)
1 Tbs + 1 tsp oil (15g)
3 Tbs molasses (64g)
1 1/8 tsp salt (7g)
6 Tbs cornmeal (56g)
2 1/2 c flour (300g)
1 1/2 tsp yeast (4.5g)
1 lb Loaf:
2/3 c water (150g)
1 Tbs oil (10g)
2 Tbs molasses (43g)
3/4 tsp salt (4.5g)
1/4 c cornmeal (38g)
1 2/3 c flour (200g)
1 tsp yeast (3g)
Place the ingredients into your bread loaf pan in the order listed (wet before dry in a bread machine). Choose a white basic loaf, select the color of your crust, and press start. After about 5 minutes, be sure your ball of dough isn't sticking to the sides or bottom of the loaf pan or paddle. If it isn't coming together into a nice ball of dough, add 1/8 c more flour until it does. Or, if it looks crumbly and not smooth, add about 1 Tbsp of water until it looks smooth like mine. Close the lid and your loaf of bread will be ready in about 3 hours! Remove immediately from bread machine pan for best results (can get a bit soggy due to the steam). Brush with butter if desired and cover with tea towel to cool. Cut after completely cooled for best crumb and crumble. Enjoy!
