5-Ingredient Fresh Milled Flour Honey Whole Wheat Sandwich Bread
Five ingredients. Fresh milled. No additives.
Ingredients:
- 1⅔ cups water (390 g)
- ⅓ cup honey (110 g)
- 650 g fresh milled hard white wheat
(or any combination of fresh milled grains) - 1½ teaspoons salt (9 g)
- 2 1/2 teaspoons active dry yeast (8 g)
Instructions:
1. Mill 700 grams of wheat (this will result in 700 grams fresh milled flour. You will use 650 grams and have a bit left over to add more flour if your dough is too wet. This is about 2 2/3 c of wheat berries and results in about 5 cups of flour.)
2. Mix & Autolyze
In the bowl of a stand mixer, combine the water, honey, fresh milled flour, and salt. Mix just until combined.
Cover and let the dough autolyze for 15 minutes to 3 hours (45 minutes is ideal).
3. Add Yeast & Knead
Sprinkle the yeast evenly over the dough. Knead using the dough hook for about 12 minutes, or until the dough passes the windowpane test.
o If the dough feels too wet, add a small amount of fresh milled flour.
o If the dough is dry or crumbly, add 1 tablespoon of water at a time, allowing it to fully incorporate before adding more.
You want a smooth dough that forms a ball and is tacky but not sticky, easy to handle, and elastic.
Dough that is too dry will result in dense, crumbly bread.
4. First Rise
Cover the dough and let it rise until expanded and puffy, about 45 minutes to 1 hour.
5. Shape
Punch down the dough, gently press it out, and shape into a loaf.
6. Second Rise
Place the loaf into a greased 10×5-inch loaf pan. Cover and let rise for about 45 minutes, or until nicely domed.
7. Bake
Bake in a 350°F (175°C) oven for 35 minutes.
For two smaller loaves:
Divide the dough in half and bake at 350°F for 28–30 minutes.
8. Cool
Remove the bread from the pan immediately. Brush the top with butter, cover with a tea towel, and allow to cool.
9. Slice & Enjoy
Slice once cooled and enjoy this simple, delicious 5-ingredient fresh milled flour sandwich bread.
