4 Ingredient Peanut Butter Cookies | Easy Gluten Free & Dairy Free Cookie Recipe

These easy 4 ingredient peanut butter cookies are soft, chewy, rich, and incredibly simple to make! Made with just peanut butter, sugar, egg, and vanilla, these flourless cookies are naturally gluten free and dairy free with no butter needed. Perfect for quick desserts, after-school snacks, holiday baking, or whenever you need an easy homemade cookie recipe fast. This classic peanut butter cookie recipe comes together in minutes with pantry staples!

1 cup creamy peanut butter (255 g)

1 cup sugar (200 g) plus extra for rolling

1 egg (50 g)

1 tsp vanilla extract (5 g)

Directions

Add all ingredients to a mixing bowl and mix until well combined. Roll the cookie dough into 1-inch balls, then roll each ball in sugar. Place on a parchment-lined baking sheet and gently flatten with a fork in a crosshatch pattern.

Bake at 350°F (180°C) for 12–15 minutes, or until lightly golden around the edges. Let the cookies cool on the baking sheet for about 10 minutes before transferring, as they will be soft and delicate while hot. Enjoy!
