4 Ingredient Condensed Milk Cake
Ingredients
¼ c melted butter (60 g)
4 large eggs
14 oz can sweetened condensed milk
1 ¼ c self-rising flour (160 g)
Optional: add 1 tsp vanilla, lemon, almond, or maple extract, or 1 tsp of cinnamon or other spices, or citrus zest for enhanced flavor.
*You can substitute self-rising flour with 1 ¼ c (160 g) of all-purpose flour + 2 tsp baking powder + pinch of salt. To use fresh milled flour, I recommend using 160 g of soft white wheat + 2 tsp baking powder + pinch of salt.
Instructions
Preheat oven to 350°F (175°C).
In a mixing bowl, whisk room-temperature eggs until smooth.
Add the melted butter (slightly cooled so it doesn’t cook the eggs) and whisk again.
Whisk in the sweetened condensed milk until fully combined.
Add the self-rising flour and mix just until combined. Do not overmix.
Pour the batter into a well-greased pan (8x8 square, round cake pan, 9-inch cast iron skillet, or 6-cup Bundt pan).
Bake for 25-35 minutes, or until a toothpick inserted in the center comes out clean. Try not to overbake or it will be dry!
Serving Ideas: Dust with powdered sugar, spread with your favorite frosting, add a light glaze, drizzle with chocolate syrup, serve warm with ice cream, or top with fresh berries and whipped cream!
