3-Ingredient Cheese Biscuits
2 cups (240 g) self-rising flour
1 cup (110 g) shredded cheese (any kind, sharp cheddar gives flavor)
1 1⁄2 cups (360 g) heavy cream
**Substitute for self-rising flour:
2 c (240 g) all-purpose flour + 1 Tbs baking powder + 1⁄2 tsp salt
*If you live in the UK, add salt to your "self-raising" flour! In the US, ours contains it.
Instructions:
Measure the self-rising flour and shredded cheese into a large bowl and whisk together to evenly distribute the cheese. Pour in the heavy cream and stir just until the dough comes together.
Turn the dough out onto a lightly floured surface. Gently flip and coat the dough with flour until it is no longer sticky. Work the dough briefly, just until it comes together into a ball. Avoid overworking the dough.
Roll or pat the dough out, then fold it into 2–3 trifolds. Roll or pat the dough out again to your desired thickness, usually about 1½ inches.
Cut the biscuits and place them close together, preferably touching, on a cast-iron griddle, skillet, cookie sheet, cake pan, or pie plate, etc. I like to place my cast-iron griddle in the oven while it preheats.
Bake at 450°F for 12–15 minutes, depending on the thickness of your biscuits and your oven, or until the biscuits are beautifully golden brown. Brush with butter if desired.
