The Easiest No-Knead 10-Grain Bread (Rise 1½ Hours or Overnight) Multigrain

Make the easiest homemade multigrain bread with this simple no-knead recipe. This soft sandwich loaf is made with 10-grain cereal (or 5-grain, 7-grain, 12-grain!) and requires no kneading at all. One of the best things about this bread is how flexible it is. You can let the dough rise for about 1½ hours for same-day bread or overnight for even more flavor. Just mix, rise, shape, and bake.

This easy multigrain loaf is perfect for:

• beginner bread bakers
• busy schedules

If you want a simple, wholesome homemade bread without complicated steps, this recipe is a great one to keep in your regular rotation.

No Knead 10-Grain Multigrain Bread

3 cups flour (360 g) (or use 360 g fresh milled hard white or other fresh grain)

1 cup 10-grain cereal (120 g)

1 3/4 cups water (415 g)

1/4 cup honey (85 g)

2 teaspoons yeast (6 g)

1 teaspoon salt (6 g)

*This is a very flexible dough and can rise on the counter for 1½ hours or up to 12 hours.

Whisk together the flour, 10-grain cereal mixture, yeast, and salt in a large bowl.

Dissolve the honey in the water, then add to the dry ingredients. Use warm water if you plan to let the dough rise for about 1½ hours, or cool water if you plan to let it rise all day or overnight. Mix until a shaggy dough forms.

Cover the bowl with plastic wrap and let rise. This is a very flexible dough and can rise on the counter for 1½ hours or up to 12 hours.

Turn the dough out onto a lightly floured surface and shape into a loaf. If the dough is very sticky, toss in flour to make it easier to handle.

Place the dough into a well-greased loaf pan. Cover and let rise, usually 45 minutes to an hour.

Bake at 375°F for 30 minutes.

Remove the loaf from the pan immediately, brush the top with butter, and cover with a tea towel to cool.
