1-Hour Yeast Rolls Recipe
To make 24 Rolls:
2 c hot water (480g)
¼ c sugar or honey (50g sugar)
2 Tbs yeast (active dry or instant) (18 g yeast)
½ c melted butter (113 g) or oil (120 g)
5 1/2 to 6 ½ c bread flour (start with 5 1/2 and add ¼ to ½ c more until your dough isn’t too sticky) (660-780 g)
2/3 c instant dry milk (45 g) (or omit and use 1 c water, 1 cup milk to substitute)
2 tsp salt (12 g)
To Make 12 Rolls:
1 cup hot water (240 g)
2 tablespoons sugar or honey (25 g sugar)
1 tablespoon yeast (active dry or instant) (9 g yeast)
1/4 cup melted butter (about 56 g) or oil (60 g)
2 3/4 to 3 1/4 cups bread flour (330–390 g) — start with 2 3/4 cups, add more if dough is sticky
1/3 c instant dry milk (22 g) (or omit and use 1/2 c water and 1/2 c milk to substitue)
1 teaspoon salt (6 g)
Instructions:
Add ingredients in order listed to mixer or bowl. Knead on speed 2 (medium low) for 5 minutes (or hand knead for 10 mins). Add more flour if dough is too wet. Cover with a warm, wet tea towel and let rise for 20 minutes. Preheat your oven to 350 degrees during this time. Divide dough and form into rolls. Place in well-oiled baking pans and put directly into the oven (no 2nd rise required!). Bake for 20-25 minutes (your preference for color). In less than an hour, your homemade yeast rolls are ready for you to enjoy!!!
