Fresh Milled Flour French Bread or Baguettes
Learn how to make French bread and baguettes using 100% fresh milled flour in this artisan bread whole grain tutorial. From grinding your own wheat berries to making FMF to shaping and baking beautiful crusty loaves, this recipe shows you how to work with freshly ground whole grain flour for incredible flavor, texture, and nutrition. This method works for baguettes, boules, and classic French loaves—all made with freshly ground flour and simple ingredients. Ingredients:
1 ¾ c lukewarm water 420g
4 1/3 c fresh milled flour 565g (565 g berries milled into 565g flour = 4 1/3 c)
1 Tbs oil 13g
2 ½ tsp salt 17g
1 Tbs sugar (optional) 13g
3 tsp instant yeast 9g (Add after autolyze!)
Instructions:
Put all ingredients in order listed except yeast into your mixing bowl. I prefer to use my Bosch Universal whenever working with whole grains. Mix just until incorporated and wet, usually less than a minute. Let sit to autolyze for 15 minutes to 2 hours to let the bran soften. After the autolyze period, sprinkle the instant yeast onto your dough, and turn on the mixer. Let knead for 6-8 minutes on medium-low speed or speed 2. Once kneaded, it should be stretchy and elastic showing that the gluten has developed. You can knead to windowpane if you’d like, but it isn’t necessary for this type of bread. If the dough seems too wet to handle, add just enough flour to make it tacky but not too dense or dry. Cover the bowl with the lid or a warm wet tea towel and let rise until expanded, usually 30 minutes to an hour. Turn the dough out from the bowl and knock down/press out well. Divide into 3 equal pieces and shape into baguettes. Mine are typically about 15 inches long. Place on baguette pan or baking pan and cover with sprayed wrap and let rise about 30 minutes. Brush with an egg or wash or spray with water, score, and bake in a preheated 475-degree oven for 14 to 15 minutes, until browned to your liking. Brush with melted butter if desired.
