Wondering how to use a Pullman pan (Pan de Mie)? In this video, I’ll show you exactly how to make soft, fluffy farmhouse white bread in a 13-inch Pullman loaf pan — perfect for that square, bakery-style sandwich loaf. This recipe creates a soft, fluffy loaf with a fine, tender crumb and a perfectly square shape — just like traditional pain de mie. Perfect for sandwiches, toast, or fresh out of the oven with butter!
Farmhouse White Bread in 13” Pullman Loaf Pan
Ingredients:
2 c hot water (480g)
3/4 c sugar or honey (150g sugar)
1 1⁄2 Tbs yeast (active dry or instant) (13.5 g)
1⁄4 c melted butter or oil (56g)
5 1⁄2 - 6 c bread flour (start with 5 and add 1⁄4 to 1⁄2 c more until your dough isn’t sticking. I
usually use 5 3⁄4 c) (660-720g)
1 1⁄2 tsp salt (9g)
Instructions:
Add ingredients in order listed to the mixing bowl of a Bosch or KitchenAid type stand
mixer. You can also mix and knead by hand or use the dough cycle of a large-capacity
bread machine. Once all of the ingredients are incorporated, check your ball of dough.
If it’s sticking to the bottom of the bowl, add a bit more flour until it pulls away and
forms a nice ball of dough. Too much flour will make for a dense loaf of bread, so add
just enough to form the ball of dough. Knead for 6-8 minutes on speed 2 or
medium/low. Once kneaded, the dough should feel tacky but not too sticky when
touched, and you should be able to handle it. It should be stretchy and elastic. Place
into a bowl and cover with a warm wet tea towel. Let rise for about 45 minutes to 1
hour or until expanded. Punch down and press out your dough into a 13-inch rectangle
(about as long as the loaf pan), and roll tightly into a loaf. Place into your 13” pullman
pan press dough flat and into the corners, and slide the lid on. I use USA Pullman pans
that do not need to be oiled or greased, but if you’re using another kind, you may need
to so that your bread doesn’t stick. Let rise again for about 30 minutes, or until the
dough is about 1-1 1⁄2 inches from the top of the loaf pan. Don’t let it overrise! If you do,
you may want to bake the loaf without the lid. Bake at 350 degrees for 35 minutes.
Remove from the loaf pan immediately and brush top of the loaf with butter. Cover
with a tea towel to let cool, then slice into your farmhouse white bread and enjoy!
