Sourdough Sandwich Bread – Dough Cycle Recipe
Ingredients:
65 grams active sourdough starter (1/3 c)
300 grams warm water (1 1/3 c)
20 grams oil (1.5 Tbs)
28 grams sugar (2 Tbsp) or honey 14 g honey (1 Tbs)
9 grams salt (2 tsp)
500 grams all-purpose flour or bread flour (4 cups
Instructions:
Place all ingredients into the bread machine loaf pan in the order listed. Start the dough cycle and let mix for 5-10 minutes. Check the dough. If it is sticking to the sides and bottom of the loaf pan, it is too wet and needs just a bit more flour. Start with 1/8 c and let mix. If more is needed, add more until it isn’t sticking and forms a nice ball of dough. If your ball of dough is crumbly, not smooth, it is too dry and needs a bit more water. Start with 1 Tbs of water and let mix well. Once your ball of dough looks like mine, you can confidently shut the lid of your bread machine and let the dough cycle do the work! Once the dough cycle is complete in 1.5 hours, turn out the dough, press out, and shape into a loaf. Place into a loaf pan and cover with oiled wrap. Let the dough rise for 6-8 hours on the counter until the dough peaks over the side of the loaf pan. Bake in a preheated 350-degree oven for 35-40 minutes until it is browned as much as you’d like. Remove immediately from the loaf pan, brush the loaf with butter, and cover with a tea towel to cool for soft crust. Slice after cooling for the best texture and crumb. ENJOY!
