Cast Iron Frittata Crustless Quiche Recipe

Make a frugal frittata with this recipe that is great for breakfast, lunch, or dinner! Simply sauté any veggies or meats you have on hand, mix in 12 eggs, throw some cheese in, and cook it in the oven for 25 minutes at 400 degrees in your cast iron skillet or a casserole dish. It is a 30 minute meal. I've found this to be the best, easiest frittata (or omelet or crustless quiche) recipe. It's a great way to use up that surplus of farm fresh eggs in the summer when your hens are laying like crazy! This is a high protein, low carb meal that my family loves. I hope yours will too.
