Bread Machine Brioche Bread
Ingredients:
1/8 c or 2 Tbs milk or cream (35g)
3 Tbs sugar (38g)
4 large eggs
3 cups flour, bread or all-purpose (360g)
1 tsp salt (6g)
3⁄4 c (1.5 sticks) butter, cubed and softened (170g)
2 1⁄4 tsp active dry yeast (7g)
Instructions:
Place all of the ingredients in the pan in the order listed. Be sure your butter is
cubed and very soft! You can make this loaf totally in the bread machine with a
basic white cycle, or use the dough cycle like I prefer to do. Choose "dough" or
"dough cycle" on your bread machine and press start. Be sure to check your ball
of dough after 5-10 minutes. If it is too wet or sticking and isn't coming together
into a nice ball of dough, add 1/8 c more flour until it does. Or, if it looks crumbly
and not smooth, add about 1 Tbsp of water or milk until it looks smooth, like
mine. In 1.5 hours, the dough cycle will end and it will be ready to shape into a
loaf. Shape into a simple loaf (or get creative and braid this dough!) and place in
well-greased or oiled bread loaf pan. Let rise on countertop for about 30 minutes
or until it has risen over the edge of the bread pan. Brush with an egg wash (1 egg
+ 1.5 tsp water or milk). Place into preheated 350-degree oven and bake for 30-
35 minutes. Remove from bread pan immediately. ENJOY!
