1 lb Loaf:
2⁄3 cup warm water (160g)
2 tbsp oil (40g)
2 tbsp honey (57g)
1 egg (optional)
2 1⁄2 cups fresh milled flour
(300g)
1 1⁄3 tsp vital wheat gluten (4g)
1 tsp salt (6g)
1 1⁄2 tsp INSTANT yeast (5g)

1.5 lb Loaf:
1 c warm water (240g)
1⁄4 c oil (60g)
1⁄4 honey (85g)
1 egg (optional)
3 3⁄4 c fresh milled flour (450g)
2 tsp vital wheat gluten (6g)
1 1⁄2 tsp salt (7g)
2 1⁄4 tsp INSTANT yeast (7 g)

2 lb Loaf:
1 1⁄3 c warm water (320g)
1⁄3 c oil (80g)
1⁄3 c + 1 tbsp honey (113g)
1 egg (optional)
4 c fresh milled flour (600g)
2 tsp vital wheat gluten (8g)
1 1⁄2 tsp salt (9g)
2 1⁄2 tsp INSTANT yeast (9g)

Bread Machine: Mill your flour just before using it in this recipe for the most nutrient dense flour. Add all ingredients EXCEPT YEAST to bread machine in order listed and choose basic white cycle or dough cycle, and let mix until incorporated. Turn off bread machine. This is the autolyze period. Let the dough sit to absorb moisture and soften bran for 15 minutes to 3 hours. I typically autolyze for 45 minutes to an hour. ADD INSTANT YEAST and choose a basic white cycle or whole wheat cycle. Check your ball of dough a few minutes in to check to be sure all ingredients are incorporated and your dough looks smooth, not too sticky, wet, or dry (see video).

Dough Cycle: You can also use the dough cycle to make this bread! Instead of choosing a basic bread cycle after adding the yeast, choose the dough setting cycle. When the dough cycle has completed in 1.5 hours, punch down dough and turn out onto counter. Shape into a loaf and place in to a well-oiled loaf pan. Let rise for 45 minutes to an hour, or until the dough is peaking over the edge of the loaf pan. Bake in 350 oven for 35 minutes. ENJOY!!
